First appearing in San Francisco in 2005, Mixt Greens is an eco-gourmet restaurant which offers diners a salad which they can pick and choose to their own liking, and have it put together right in front of them. It has a number of options for your salad, including extras such as beets and a number of different meat options – chicken, pork, and even steak could be added. However their fancier-than-usual salads are not their only commitment to living “green” – they’re also very dedicated to sustainability and being eco-friendly in their business practises.

They’ve coined their food “eco-gourmet” – although they serve food as you might find it anywhere else, they’ve taken extra steps to ensure sustainability in all aspects of their restaurant. Their equipment is energy-efficient, they use recycled paint to decorate their outlets, and make sure to use biodegradable materials in their packaging, such as PLA. After you’ve eaten the food and they’ve finished cooking it, all the food waste goes into composting – every stage of the process has had sustainability considered. They’ve been so dedicated to this that they’ve managed to divert 99% of their waste away from landfills into eco-friendly and sustainable alternatives.

Before they even plan the food – they plan where it comes from. Mixt sources their ingredients from local farms. Even when you order your food online, they’ll ask you to select which branch you’ll be ordering from so as to ensure it’s the shortest distance (and least amount of fuel expended). They choose to support local farmers that also farm organic produce, while ensuring their business practises.
